Each year, American fish farmers collect hundreds of thousands of tons of this seasonal delicacy from Louisiana’s marshes and waterways. Louisiana is the primary producer in the United States, with annual harvests of about 80 million pounds of procambarid crawfishes for human consumption , it includes crawfish from aquaculture and the commercial wild fishing sector. __This exceeds 95% of the total crawfish harvest in the United States.Which is amazing ! __ Aquaculture has contributed, on average, 81% of the yearly harvest during the last five years. The red swamp crawfish or Procambarus clarkii and the white river crawfish Procambarus zonangulus are both commercially fished, although the former is much more common. Peak harvest for live crawfish comes in the months of March through June, and this is true whether the crawfish comes from an aquaculture operation or the wild fishery sector . __In the past, most of the nation’s supply has been consumed in Louisiana and the neighboring regions, especially Texas, the Mississippi Gulf coast, and the Florida panhandle . Only few regions are suitable for cultivating crawfish. The constantly changingl nature of the supply, the volatility of the market, and cultural taboos, has kept crawfish sales to a minimum on a national scale. But now Crawfish are now more accessible than ever thanks to the import of frozen food.
